Baked Cinnamon Pumpkin Butter French Toast

This breakfast looks like a mess, but I assure you it was delicious. I actually made a whole pan of this on Sunday morning, if you read that post, and we shared it that day since Keshav had a rare Sunday off. What you see in this photo above is some of the leftovers, warmed up. I will have some myself later today. There is a large portion that I froze, but I am not sure how it will thaw, so that is a mystery to be solved at a later date.

I have been reading that it is good for the body to have a "hot breakfast", so I guess this fits the bill. But it is not always easy to make a fresh hot breakfast, and that is why it is nice to have leftovers to warm up. I wish there were a way to serve smoothies hot, but I don't know if that is possible. Smoothies are definitely not a hot breakfast, but I continue to make them for Keshav because they are one of the only ways he will eat vegetables. He will eat anything if he likes the taste, meaning that as long as I can successful hide something in a dish I can sneak in healthy ingredients without him knowing about it. To be clear, he knows that I do this and approves.

The other day I made him toast with almond butter and drizzled honey, something he likes. When I make this I usually sprinkle on a spoonful of ground flax meal, which offers healthy fiber, and then I drizzle the honey over the whole thing to "cement" it all together. He never notices the flax meal because it's absorbed into the almond butter and honey. But the last time I made this he came into the kitchen as I was spooning on the flax meal, and he asked me to stop. I told him that he had eaten it before with no complaints, but the problem is that now that he knew it was on there it would bother him. Sigh. I left it on and thankfully he was able to accept the flax and eat the toast. Crisis averted and progress made.

Halloween is this weekend. I have no big plans, and Keshav is working. He wants to go to a Halloween party afterwards and generously invited me to not join him, as it will be mostly "young people" and not be starting until 9pm. I have no need to go--I just don't care to go out late anymore when I can be in bed reading and wake up early in the morning. Let him go have fun with the other young people!

I also work that day, but will finish mid-afternoon. If it is not raining, I will likely ride my bike through the West Hollywood Carnaval area as they are setting up. Once the event starts happening, I intend to be home safe and sound, away from the crowds and chaos. There is a very good chance it will be raining, so I think my plan is a good one--staying inside. I remember one Halloween many years ago when I did go to the Carnaval and it started raining. I didn't mind at the time. The rain felt good and I may have been high. But these days I prefer a different experience.

On Sunday I will remove the Halloween decor from the apartment and put up my fall backdrop up in the front window. I love how realistic it is, making it seem as though we have a lovely patch of woods right outside, with trees turning Autumn gold and red, rather than a drab neighboring apartment building. It makes me happy. It will be perfect for a gathering I hope to host next weekend where I will invite other therapist buddies to come enjoy a chili bar with all the fixings. Let's hope enough of my colleagues are available. 6-8 guests would be nice. The key is to have fixings that people don't expect. I am up to the task.
