Breakfast Nachos

I recently made the above Breakfast Nachos for both of us. It was on Sunday, 1/25, and I wanted to surprise Keshav with a combination of two things he loves: breakfast and nachos. I happen to love that combo myself, so it was hardly a stretch for me to make these. Finding ways to combine his favorites is always a fun endeavor--like the time I found a recipe for Pizza Mac n' Cheese and his head almost exploded with excitement (I am glad it didn't).

What I love about these nachos is that, while they look like fast food, they are actually pretty healthy. I make the tortilla chips myself, and yes they are fried, but there are no artificial ingredients in them. The toppings for the chips include cheese, but also black beans, avocado, tomato, onion, and cilantro. What you see above was made on a quarter sheet pan, and Keshav was only able to eat about a fourth of them, so guess who "had to" finish the tray?

When he has Sundays off from work, I like to make a "special" breakfast and dinner just because it makes the day feel different than the weekdays. Sundays are for slow cooker meals, simmering all day long and filling the home with wonderful smells. Sundays are for slow cooking a pork roast until it shreds off the bone with the flick of a fork. Whip up some garlic mashed potatoes and a vegetable and you have a fantastic Sunday Supper. 

After we ate the nachos. we didn't really do much for the rest of the day--but then we're mostly a home-based couple. You know how some couples are very social and do lots of activities outside of the home? Well, that is not us. Our marriage thrives because it is a space where we can be alone, together, safely. Sometimes if makes it hard to talk about our marriage because it does not include many of the typical relationship tropes that people think of--but then as a couples therapist for over 15 years I realize that every marriage works in its own unique way. There is no one right way to be married.

I struggled this week to write a "Keshav's Breakfast" entry because there were so many things I could write about. I had to go back to my original intention for this project, that being to give me a platform to write about our daily lives in a way that both chronicles and entertains. The "entertains" part is included in the goal because otherwise I have a tendency to be quite serious in my writing, and what fun would that be to read day after day?

This Sunday Keshav is not working again, and I intend to make pancakes and bacon, a Sunday morning classic. That meal always forces us to nap afterwards after the sugar high of the syrup, but if there is anything better than pancakes and bacon on a Sunday morning, it has to be the nap that follows it. Besides, we are going out the night before, believe it or not, to attend a birthday party for one of Keshav's work colleagues. 

There will be catered food, which I am excited about because it is nice to just be a guest from time to time and not have to make the food. I am told that the birthday gal is excited to meet me, which is nice to hear, but leaves me wondering what exactly about the idea of meeting me is exciting? What story does she have in her head about me, and how much of it is influenced by what my husband has told her? I just hope I don't disappoint her in person, but so far, in my experiences meeting people, that has never happened. After all, I DO know how to walk into a party.
