| Breakfast Quinoa |
11/24/25
This is one of those breakfasts I like to make that "sneak in" nutrition. There are pecans in the quinoa, but the whole shebang is lightly sweetened with cinnamon and maple syrup. The recipe calls for orange zest as well, but I didn't have an orange on hand, but Keshav was none the wiser. Can you imagine him asking "Where is the orange zest in this recipe?". No, neither can I.
He does sometimes question what I make for him, but only if there is something that does not agree with him. The other night I made coffee-rubbed pork tenderloin with blistered green beans, and after trying the beans, he asked, "Are these fresh beans?" I looked at him and wondered how he could ask such a question of me, as though I were the type of shopper who looks for the tired old beans in the market.
I told him, "Yes, they are fresh of course, but they are blistered, so that wilts them somewhat." I don't know that my answer comforted him, but he does get credit for eating all the beans on his plate. That's love for you.

It's Thanksgiving week, and I am off work for the whole week. This happens because I take the time off, not because anyone "let's" me. I own my own business, so I can make these decisions. Of course when I take time off I don't make any money, but making money is less important than prepping for Thanksgiving dinner, especially when the in-laws are coming to town.
My friend Melani told me today that she will have one day only to prep for her dinner. I think I would abort the whole thing if I only had one day. But maybe not. We do what we have to do, don't we?
I have my prep schedule laid out by the hour, like a military exercise. I have to do it this way so that I lessen my anxiety about the dinner. As long as I know that I have allotted time for everything, I can relax a bit. There will be some stress the day of just getting everything ready for serving, but my friend Dave will be here to help host so I can focus on the meal.
Keshav will be off for the rest of the week until Friday, so that means he is "on his own" for breakfast. When he is not working, he makes his own breakfast, unless it is a Sunday morning when I am making something fancier for the two of us. His usual go-to breakfast to make for himself is a bagel with butter or cream cheese, or a naan with ham and an egg, sunny side up, on the top. That is pretty much the limit of his breakfast repertoire, but hey, why fix it if it ain't broke.
Time to start on my prep schedule for the day.
